VINEYARD MANAGEMENT
Seth B
Seth’s culinary career began young, leading him to open Ambrozia in Old Town Albuquerque at just 22. The restaurant gained acclaim for its inventive menu and welcoming atmosphere, setting the tone for his culinary path. After a hiatus, Seth and his wife, Jessica Montano Beecher, launched Central Bodega in 2022 and Wine & Dine by MISSION WINERY in 2024, quickly earning community acclaim. Seth works closely with Jessica to create the menus and perfect the dishes at both of their thriving restaurants, ensuring every meal is a culinary experience.
Committed to true farm-to-table dining, Seth grows produce for the restaurants at the family’s farm in Los Ranchos de Albuquerque. As a chef, he also partners with other local producers to source the finest meats, mushrooms, and ingredients, further showcasing the region’s bounty on his menus.
Rooted in a family heritage connected to Taos Pueblo, Seth finds inspiration outdoors—mountain biking, snowboarding, and camping. His passion for nature led to a deep dive into viticulture, where he brings his chef’s precision to vineyard management, growing the grapes his wife then crafts into wines that honor the land and its caretakers.
Above all, Seth is a devoted father to his two children, daughter Lyric and son Axel, who he adores and cherishes as his greatest inspiration.
Seth’s story is one of passion, perseverance, and an enduring love for life’s flavors, family, and natural beauty.

Sommelier
Juan Carlos
A native New Mexican with a decade of experience in the local liquor industry, Juan Carlos is a familiar face in New Mexico wine. After a previous career in state politics and government, he joined the team at Albuquerque’s premier liquor and wine shop and immersed himself in the craft of cocktails and furthering his never-ending education of wine from New Mexico and around the world.
As a consummate nerd, his love of history and voracious appetite for knowledge has led to a personal mental trove of strange facts and interesting trivia about a surprisingly broad range of subjects. A former musician, he still plays guitar and string bass as often as he can, and his training as a classical tenor has led to an unexpected joy for somewhat obscure languages.
Now as the assistant manager of our tasting room on Central, he brings to Mission his deep love of both New Mexico and wine as well as his love of Nob Hill as a twenty year resident of the neighborhood. Endlessly fascinated in the history and agriculture of the region, he is always ready to answer questions about our rich culture of wine, beer, and spirits, and his passion for food and its symbiotic relationship with wine is infectious.
